Recipe from "Taste of Home, 1997 Annual Recipes" page 135
Crust:
3/4 cup butter (you can use margarine....but don't) softened
1/2 cup powdered sugar
1-1/2 cups all-purpose flour
Filling:
1 package (10 oz) vanilla chips, melted and cooled
1/4 whipping cream
1 package (8oz) of cream cheese, softened
Toppings:
1 pint fresh, sliced strawberries
1 cup fresh blueberries
1 cup fresh raspberries
Glaze:
1/2 cup pineapple juice
1/4 cup sugar
1 tbs. cornstarch
1/2 tsp lemon juice
Cream butter and powdered sugar. Beat in flour (mixture will be crumbly). Pat into the bottom of a greased 12-in. pizza pan. Bake at 300 degrees for 25-28 minutes or until lightly browned. Cool.
Beat melted chips and cream. Add cream cheese and beat until smooth. Spread over cooled crust. Arrange berries over the filling. In a saucepan, combine glaze ingredients. Bring to a boil over medium heat. Boil for 2 minutes or until thickened. Stir continuously. Cool and brush over fruit. Chill at least 1 hour before serving.
